Using linux is an excellent idea. I am a mac biggot personally ( as I type on my PC ). The number one issue to taking ministries to Linux is meeting a list of requirements that the users must have in order to do their work.
Browser, email, photos, MS Word.
I still find times when people send email formatted in MS Word that I can't read natively on my Mac.
You need to support Digital cameras and edit ( to a limited amount ) photos
Users will need to setup the systems remotely with out any suppoort
I like to use RealVNC for this. Very powerful, but slow over dialup connection.
I thin a lot of tesing would have to happen, in order for Linux to be viable for a non-geek community.
